抄録: | Among the miniature tools found in the tombs of Han Dynasty through T'ang Dynasty, the cooking utensil is a combination of Fu (釜) and Tseng (甑). The narrow bottom of Tseng is to be placed upon the top of Fu which is also very narrow. Placing a strainet between Fu and Tseng, people steamed grains. At T'ang Dynasty, grains were boiled in a pan with a lid which is of almost the same shape that is used today. This change of cooking occurred when wheat, especially in flour, became prevalent as staple food and they necessarily came to use a Pan with which they can cook meals not only by steaming, but also by boiling, frying and broiling. |
