<論文>イタリア・トスカーナ州における食と観光の交錯をめぐる人類学的考察 --フィレンツェ近郊における農家の日常とアグリトゥリズモにおける肉食を事例に--

Abstract

本論文は，アグリトゥリズモの中心地として知られるイタリア・トスカーナ州フィレンツェ近郊を対象として，当該地域における食と観光の関係の現在を，現地の人々の日常的な食実践と関わる観点を取り入れて議論するものである．現地の人々(農家)は自給的な食体系を理想としている．その中でも，農園内で自給できる野生肉とワインとが，野生動物と隣り合わせのブドウ畑における農作業中の実践や経験と関わる特別な組み合わせとなっている．一方，観光の文脈においては，野生肉ではなく，豚肉加工品などの飼育肉がワインと共に観光者に披露される．しかし，野生肉が不在であるという矛盾を抱えつつも，依然，原料自給の試みがアピールされるだけでなく，同時に野生肉に関する過去の食体系が語られ，再認識されもする．そのため，日常における食実践・経験と，観光における食とが互いに補強し合う関係にある．

This paper focuses on the suburban Florence, Tuscany (Italy), known as a hub of agritourism, and discusses the current relationship between food and tourism in the region by taking into account everyday food practices of the local people. Local people, particularly farmers, idealize a self-sufficient food system. Among these, game meat and wine, which can be self-sufficiently produced on the farm, form a special combination due to their connection with farming practices and experiences in vineyards where wild animals are felt close. However, in the context of tourism, it is not game meat but raised meats such as pork salami are presented to tourists alongside wine. However, despite the contradiction of the absence of game meat, here not only efforts toward self-sufficiency in ingredients are still emphasized, but also the past food system involving game meats is both narrated and re-evaluated. Thus, the relationship between everyday food practices and experiences, and food in tourism is mutually reinforced.
